What is Shiso?
Shiso is a type of Japanese mint that was brought over to the Americas by Japanese immigrants in the early 1800’s. It offers a clean, refreshing and aromatic quality to its diverse applications in food. Like the Shiso leaf, our goal is to express ourselves with clean, healthy, creative, and unique dishes in a positive atmosphere.
We strive to be socially responsible stewards to our customers, our community and our environment. We proudly support local Sonoma Valley farmers and culinary artisans; as such we are committed to using only chemical free produce, meat, fish and dairy. The Japanese have set exceptional examples of being environmentally conscious and taking pride in what they do. We like to think we can do the same. Please keep in mind each dish is made to order, ensuring that only the very best is presented on each plate.

A graduate of CCA in San Francisco, Ed’s U.S. stints include externships at Manele Bay (Lanai, HI), Lark Creek (San Mateo), Wolfdales (Tahoe City), and Piatti’s (Roseville). He also worked in Europe at Restaurant Godt (Michelin Star), Zeleste, and Sushitarian. Immediately prior to opening the doors at Shiso, Ed owned and operated Asian Bistro and Wine Bar in Sun River, Oregon.
Voted Best New Restaurant by Sonoma Magazine, Shiso features an extensive Modern Asian menu highlighting the very best Sonoma County has to offer, crafting fresh, innovative sushi, sashimi, hamachi, korean short ribs and more, served with premium sakes.
Manuel and Kimberley Azevedo
Manuel and Kimberley bring over 20 years of restaurant experience to their role as managing partners. Manuel is Chef/owner of Sonoma’s LaSalette Restaurant and partner in Café Lucia in Healdsburg. At the heart of Manuel’s culinary philosophy is his steadfast belief in incorporating local, fresh, seasonal ingredients.
An acclaimed author, in 2012 Manuel published LaSalette Cookbook: Cozinha Nova Portuguesa, an extraordinary collection of recipes that feature the namesake restaurant’s most popular dishes adapted for the home cook. Kimberley and Manuel joined the Shiso team in 2014.
